Fall Garden Updates!

The seasons are certainly changing here in the Pacific Northwest, as we go from warm and dry weather to wind, rain, and cooler temperatures. So far I am happy to report the fall garden is doing really well! There is currently an abundance of spinach and green beans, with broccoli, cauliflower, carrots and more on the way.



I am thrilled about the spinach because I've never had much luck growing it in the spring and summer months. I think it prefers the cooler temperatures and shorter days. This will definitely be a staple for future fall gardens!



The green beans are also doing really well, and are great for adding nitrogen to the soil for next year's garden. Fresh green beans are delicious as is for a healthy snack, or my favorite way to cook them is to simply drizzle with olive oil, season with salt and pepper, and roast at 425° F for 15 minutes.



I also have lots and lots of garlic to plant - 262 cloves, to be exact! Just waiting for the next day of clear weather, as these need to be planted before the first frost.



It has been neat to see the calendula doing so well in the cooler temps - these calendulas are volunteers from last year. Calendula is a wonderful apothecary herb that can be used in salves, soaps, teas, and more.



The broccoli, cabbage, cauliflower, carrots, kale, beets, and chard all seem to be doing well, and hopefully we'll be able to harvest some of these in November! There is also one volunteer pea plant that I put a tomato trellis around to see how it does.
